Sabrina Davidson’s post-graduation adventure in 2016 led her from Saint John to Taiwan, where she embarked on a teaching career teaching English and exploring the local cuisine. Her culinary journey began with documenting her experiences through videos shared with family and friends, which eventually gained attention from the Taiwanese community and government. What started as a side project during her teaching tenure evolved into a full-time occupation focused on creating travel food content.
Upon the conclusion of her teaching contract, Davidson transitioned to producing travel food content full time, until the onset of the COVID-19 pandemic prompted a hiatus. During this break, she gained a fresh perspective on her hometown, Saint John, recognizing the rich stories of local farmers and fishermen contributing to the region’s culinary tapestry.
Returning to Saint John, Davidson rediscovered her appreciation for the local food scene, leading to the development of a TV show titled “Sabrina Eats! Saint John,” set to debut in January. Collaborating with local chef Jakob Lutes, Davidson explores the flavors of New Brunswick by tasting dishes crafted with three locally sourced ingredients.
In the show, Davidson samples a variety of mushrooms foraged from Moss Glen Nature Trail, transformed into a delectable mushroom sourdough toast, and savors apples from Mackay Apple Orchard, incorporated into a savory apple mince pie. Additionally, she experiences the flavors of large black hog, an endangered heritage swine breed, from Belding Hills Farm, featured in a traditional Acadian dish known as rappie pie. Davidson emphasizes the importance of consuming such endangered breeds to support farmers and preserve these species.
Despite her academic background in biology and psychology, Davidson’s unexpected journey into food content creation has allowed her to appreciate the diverse world of flavors and cuisines. Through her experiences in Taiwan and back home in Saint John, she has cultivated a newfound passion for exploring and sharing the unique stories behind local ingredients and dishes.
